Scarlett always believed that food could tell stories that books often could not. 

Her curiosity about India began when she started working with colleagues from different parts of the country. She noticed how every conversation about family, festivals, and celebrations eventually came back to food. Her goal was simple.

Next came Rajma Masala, a dish that reminded her of family meals and simple moments shared around the dining table. 

Her journal entry read: 

“Some foods are special because they bring people together.” 

She then discovered Chole Masala, where chickpeas sauteed with aromatic spices created a flavorful dish loved across generations. The spiced sauce and bold flavors showed her how simple ingredients could create something unforgettable. 

The final chapter from North India was Paneer Makhani

The soft paneer combined with a creamy sauce introduced Scarlett to the richness of traditional cooking styles. She wrote about how the dish represented the balance between comfort and celebration.

Through these regional dishes, Scarlett realized that every recipe carried a connection to the people and places where it began.
